Biscuits ( Hearty Breakfast ) Recipe

 


1 1/4 c Flour
3/4 c Cornmeal, yellow
2 ts Baking powder
1/4 ts Salt
1/4 ts Red pepper flakes, crushed
1/4 ts Thyme, dried
6 tb Butter; chilled, cut into
-small pieces (3/4 stick)
5 x Bacon slices; cooked,
-crumbled
1 ts Onion, green; finely chopped
1 c Milk

Preheat oven to 425 degrees. Grease a baking sheet.

In a large bowl, mix together flour, cornmeal, baking powder, salt,
red pepper flakes, and thyme. Using a pastry blender or 2 knives,
cut butter into flour mixture until coarse crumbs form.

Stir in crumbled bacon and green onion.

Make a well in the center of flour mixture. Add milk all at once to
well, tossing with a fork until dry ingrtedients are just moistened.
(Do not overmix.)

On a floured surface, pat dough into a 3/4" thickness. Using a
floured 2" round biscuit cutter, cut out biscuits. Gather trimmings,
pat to a 3/4" thickness, and cut out more biscuits. Place, 1 inch
apart, on prepared baking sheet.

Bake biscuits until golden, 20 minutes. Transfer baking sheet to a
wire rack to cool slightly.
