Biscuits ( Pepper Cheese ) Recipe


1 c Plus 2 Tbsp flour
1 1/2 ts Baking powder
1/2 ts Salt
1/2 c Sharp chedder cheese, finely
2 tb Plum tomatoes, peeled,
-seeded, chopped
1 ts Jalapeno, fine minced
1/2 c Milk

Into a bowl, sift the flour, baking powder, and salt; add the chedder,
tomato, and jalapeno, and toss the mixture well. Add the milk and
stir with a fork until it form a soft, dry dough. Shape dough into 6
balls, transfer the balls to a buttered and floured baking sheet, and
pat into 3" rounds. Bake the biscuits in a preheated 450 F. oven for
15-18 minutes or until golden brown and crusty. Serve warm with soups
or omelets.
