1 1/2 c Chicken; cooked, cubed *
2/3 c Celery: finely chopped
1/2 sm Onion; minced
2/3 c Mayonnaise **
1 tb Prepared mustard
Salt, pepper, Louisiana
-hot sauce, assorted herbs
-to taste
* The breast meat is best for this but drumstick and thigh meat
can be used too.
** Or half mayo and half sour cream. For a low fat version try
half lite mayo and half skimmed milk yogurt with a dash of lemon
juice.
Mix all the ingredients, chill and serve on a bed of lettuce or
use as a sandwich filling. Serves three as a light luncheon main
dish, six as an appetizer or makes 6-9 sandwiches.
