2 Whole chicken breasts,
-split in 1/2
1/2 c Soy sauce
1/4 c Dry sherry
1 tb Sugar
1 Garlic clove, chopped
1/2 ts Ginger
1. Arrange chicken, skin side up, in a single layer in a shallow dish.
2. Combine soy sauce, sherry, sugar, garlic & ginger; pour over
chicken. Marinate in refrigerator, turning once or twice, for 2 hours.
3. Preheat broiler. Remove chicken from marinade. Spray rack in
broiler pan w/ vegetable spray; place chicken on rack. Broil 5 1/2"
from heat, turning once & basting w/ marinade, about 10 minutes.
