3 lb Broiler-fryer; cut up
Salt
Cayenne pepper
2 tb Bacon drippings
1/4 c Almonds, slivered
1/3 c Raisins
20 oz Pineapple chunks; drained
1 1/2 c Orange juice
1/8 ts Cinnamon, ground
1/8 ts Clove, ground
2 tb Flour, all-purpose
1/4 c Water
Sprinkle chicken with salt and cayenne; brown in hot bacon drippings
in a large skillet. Combine next 6 ingredients, and pour over
chicken. Cover and simmer 30 to 45 minutes or until tender. Remove
chicken to serving platter.
Combine flour and water, stirring until smooth; stir into pan
drippings. Cook over low heat, stirring constantly, until thickened.
Serve gravy with chicken.
