Madras Chicken Curry Recipe


Chicken, 8 Pieces unboned
3 tb Oil, vegetable
2 md Onions, chopped
4 ts Garlic, chopped
1 tb Ginger, chopped
1 ts Tumeric spice
3 ts Chilli, chopped
3 ts Coriander, ground spice
1 ts Cummin, ground spice
2 md Tomatoes, chopped
2 sm Cinnamon sticks
2 c Coconut milk

1. Heat oil, fry onions, garlic & ginger until soft
2. Add tumeric, chilli, coriander & cummin & fry
: for 2 minutes.
3. Add tomato, stir well, cover & cook till tomato
: is pulpy.
4. Add chicken pieces and cinnamon sticks & stir
: well until chicken is coated with mixture
5. Cover & cook until chicken is almost cooked
6. Stir in coconut milk & simmer uncovered for
: about 15minutes longer. Serve with rice
