One-Pan Chicken Dijon and Potatoes Recipe

This recipe speeds up the cooking process by having you microwave the potatoes while the chicken is cooking in a skillet for "real pan flavor".

One-Pan Potatoes & Chicken Dijon
Servings: 4
4 med potatoes, sliced 1/4" thick
1 lb boned and skinned chicken breasts, sliced 1/2" thick
2 Tbsp vegetable oil
1/4 cup prepared honey-Dijon barbecue sauce
1 tsp dried tarragon

Microwave the potato slices for 8-10 minutes, until tender.

While the potatoes cook, in a large skillet toss and brown chicken in oil over high heat 5 minutes. Add potatoes; saute and toss until
potatoes are lightly browned. Add barbecue sauce and tarragon, and toss until heated through.

Time: 20 minutes
