This recipe
should make some good coconut macaroons!
1/3 cup butter
1 - 3 oz. pkg. cream cheese, softened
3/4 cup sugar
1 egg yolk
2 tsp orange juice
1 tsp almond extract
1 1/4 cup all purpose flour
2 tsp baking powder
1/4 tsp salt
3 3/4 cup sweetened coconut flakes (10 oz. pkg.) divided
Beat butter, cream cheese and
sugar in large bowl till well blended; add egg yolk, orange juice, and
almond extract. In separate bowl stir together flour, baking powder
and salt. Gradually add to butter mixture,
beating till well blended. Stir in 3 cups of the coconut. Cover and
refrigerate 1 hour or until firm enough to handle. Heat oven to 350
degrees F. Shape dough into 1" balls; roll each ball in remaining
coconut. Place on ungreased cookie sheet. Bake 10 - 12 minutes or until
lightly browned. Cool 1 minute; carefully remove to wire rack. Cool
completely. Makes approximately 3 1/2 doz. 1" cookies.
