This simple and quick whitefish recipe makes delicious
Greek-style baked fish! (The metric weight and volume measurements in

Ingredients:
4 small (500-700g) whole firm fleshed whitefish, scaled and gutted
700g onions, sliced
2 red bell peppers, sliced
2 green bell peppers, sliced
handful of chopped fresh oregano
handful of chopped fresh parsley
200g garlic, sliced
300g Kalamata olives
500ml white wine
200ml olive oil
200ml lemon
Sauté the onions, peppers and garlic in the olive
oil until soft but not colored. Add herbs and the liquids. Bring to
the boil and remove from heat.
Make 4 diagonal cuts in the flesh of the whole fish. Make a parcel with
aluminum foil and place fish in the parcel standing upright.
Pour the precooked mixture over the fish. Wrap up securely so no steam
can escape. Cook in a hot oven for 12-15 minutes. Unwrap and serve with
Greek salad.
