Recipe for Irish Potato Candy

When I stumbled upon this recipe for Irish Potato Candy, I had no idea how popular it'd be! Enjoy!

1 small potato
dash of salt
1 Tbsp butter
1 lb confectioner's sugar
1 tsp vanilla
1/3 cup peanut butter

Peel cooked potato. Mash with salt and butter. Add sugar, 1/3 at a time, beating until smooth and well blended. Mix in the vanilla. If the mixture is not stiff enough to roll, add more sugar. Roll out between 2 sheets of
wax paper until 1/8 inch thick. Spread roll with peanut butter. Roll up like jelly roll. Chill for at least 1 hour, then slice into 1/4 inch pieces. Let ripen a day before eating.
