This recipe yields one serving--perfect
for that total peanut butter lover!
2 tb Butter or margarine
1/4 Onion, diced
1 Celery rib, sliced thin
2 tb Flour
2 c Chicken broth
1/4 ts Salt
1/2 c Smooth peanut butter
1 dash celery salt
1 ts Lemon juice
2 tb Chopped salted peanuts
Wilt onion and celery in butter. Add flour and
mix well. Stir in chicken broth and cook 30 min.
Remove from heat and strain. Stir salt, peanut
butter, celery salt, and lemon juice into broth.
Serve in bowls with chopped peanuts sprinkled over.
