Like your roast beef cooked
rare? With this recipe, it should always come out
right!
1 beef roast - any size
Preheat oven to 500°. Season
roast as desired.
Cook roast for 25 minutes at 500°. Remove and
cool for 20 minutes. Reduce oven temperature and
continue to bake as indicated below: Small to
medium roast (up to 6 Lb.) - Reduce heat to 300°
and cook for another 17 minutes per pound. Large
roast (6 Lb. or more) - Reduce heat to 250°
and cook for another 17 minutes per pound.
Health Warning: Raw or undercooked
foods carry the risk of food-borne disease. To
eliminate this risk, cook food to its fully-done
state. (I like food cooked fairly rare too, but
I must warn that "it tastes good" is
not the same as it being completely safe!)
