6 c Flour
1/2 c Sugar
2 tb Cream of tartar
1 tb Baking soda
1 1/2 ts Salt
1 c Shortening or butter flavord
2 1/4 c Buttermilk
1/4 lb Cheese, cheddar
1 cn Walnuts, 4 oz, chopped
2 tb Maple syrup
1/2 c Cheese, parmesan
Pepper, black
In a large bowl, mix flour, sugar, cream of tartar, baking soda, and
salt. Cut shortening in until mixture resembles coarse crumbs. Stir in
buttermilk, quickly mix until mixture just leaves the side of the
bowl. Turn dough onto lightly floured surface, divide into thirds,
cover lightly with wrap. Preheat oven to 425. With floured hands,
knead one third of dough with cheese, kneading about 6 to 8 strokes
to mix thoroughly. With floured pin, roll out to 3/4 inch thick. Cut
into 3 inch rounds with cookie cutter or glass. Place biscuits 1 inch
apart on ungreased cookie sheet. Press trimmings together, roll out
and cut . you will have enough to make about 6 biscuits. Bake 12 - 15
minutes, remove Knead 2nd third of dough with walnuts, roll and cut
as above. Brush with maple syrup. Bake as above. Meanwhile, knead
dough with Parmesan cheese and 1/2 tsp pepper. cut as above.
